Pholiote adipeuse

Pholiota adiposa, also known as “Chestnut Mushroom” in English or “Numerisugitake” in Japan, is appreciated for its firm texture and nutty flavor that delights the palate.

History

Relatively little known or even overlooked in the West, the Chestnut Mushroom is highly valued for its culinary qualities in Japan and for its medicinal uses in China.

It is cultivated throughout temperate Asia, and for several decades now also in the Americas and Australia. Its arrival in Europe, via the UK and the Netherlands, has been discreet but steady.

Here in Pompaples, we have finally been producing it since March 2023.

  • All essential amino acids for humans

  • Vitamins : B1, B2, B3, B5, B6, D2 (after one hour of sun exposure)
  • Minerals and trace elements: zinc, copper, phosphorus, iron, potassium

  • Protein: 20–25% (dry weight)

  • Polysaccharides: beta-(1,3-1,6)-glucans

  • Sterols: ergosterol (provitamin D2), beta-sitosterol

  • Fibers

  • Lectins

Taste Experience

First of all, this mushroom MUST BE EATEN COOKED.
In soups, stews, Chinese hotpot, or sauces, this mushroom releases exquisite nutty aromas and keeps its crunch even after long cooking.
Chestnut mushrooms are also excellent roasted, grilled, or sautéed. Their firm texture holds up well in stir-fries, pasta, risottos, or as a topping for salads and meats.

Functional and Medicinal Aspects

Chestnut mushrooms are not only a good source of protein and nutrients but also have interesting medicinal properties. They are known for their antimicrobial and antitumor effects, thanks to lectins that help prevent the spread of certain cancer cells.
